Anyone who has visited Palestine, or been invited to a Palestinian home, quickly realizes that hospitality, generosity, and truly delicious food are a treasured and enjoyable part of everyday life. The preparation and presentation of Palestinian cuisine is an art form as well as a way to reconnect with traditions, family, friends, and memories. Palestinian cuisine is not only tasty, but also quite good for you, since it relies on fresh vegetables, warm spices, homemade bread, and olive oil. We are pleased to offer recipes from the EI kitchen.

Manaaqeesh: a savory treat!

Za'atar, a blend of wild thyme, summer savory, sumac and toasted sesame seeds, gives a uniquely delicious taste to these pizza-like treats. Manaaqeesh (plural, manqousheh is the singular) are often bought from street vendors in the morning. They make a fine breakfast when accompanied by fresh yogurt, sliced tomatoes, and peeled cucumbers. Za'atar is said to have special strengthening properties for the body and the mind.
